Ingredients:
For the Meatloaf:
1 lb ground beef
1/2 lb ground pork
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
For the Mashed Potatoes:
4 medium potatoes, peeled and cubed
1/2 cup milk
4 tablespoons butter
Salt and pepper to taste
Fresh parsley (optional, for garnish)
Directions:
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, chopped onion, garlic, Worcestershire sauce, thyme, salt, and pepper. Mix until well combined.
Transfer the meat mixture into the prepared loaf pan, pressing it down to shape the loaf.
Bake for 50-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
While the meatloaf is baking, make the mashed potatoes. Boil the cubed potatoes in salted water for 15-20 minutes, or until they are fork-tender.
Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash until smooth and creamy.
Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve the meatloaf with a generous scoop of mashed potatoes on the side. Garnish with fresh parsley if desired.
