Potato and Bacon Soup with Parmesan and Sour Cream

Warm up with this creamy, comforting soup packed with tender potatoes, crispy bacon, rich Parmesan, and a dollop of tangy sour cream. Perfect for chilly days!
Ingredients
For the Soup Base:
6 medium potatoes, peeled and diced
6 slices bacon, chopped
1 small onion, diced
3 cloves garlic, minced
4 cups chicken broth



1 cup whole milk
1 cup heavy cream
½ cup grated Parmesan cheese
1 tsp dried thyme
Salt and pepper, to taste
For Garnish:
½ cup sour cream
Chopped fresh chives or green onions
Extra Parmesan cheese for sprinkling
Instructions
Cook the Bacon:
In a large pot, cook the chopped bacon over medium heat until crispy.
Remove with a slotted spoon and set aside, leaving the drippings in the pot.
Sauté the Vegetables:
Add the diced onion to the pot and sauté in the bacon drippings for 3–4 minutes until softened.
Stir in the garlic and cook for 1 minute until fragrant.
Simmer the Soup Base:
Add the diced potatoes and chicken broth to the pot.
Bring to a boil, then lower the heat and simmer until potatoes are fork-tender, about 15–20 minutes.
Blend (Optional):
For a creamier texture, use an immersion blender to partially blend the soup, leaving some potato chunks for texture.
Add the Creaminess:
Stir in the milk, heavy cream, and Parmesan cheese.
Season with thyme, salt, and pepper. Let it simmer for 5–7 minutes, stirring occasionally.
Finish with Bacon:
Stir in half of the crispy bacon, reserving the rest for garnish.
Serve and Garnish:
Ladle the soup into bowls. Top with a dollop of sour cream, a sprinkle of chives or green onions, the reserved bacon, and extra Parmesan cheese.
