Rich Banana Bread

Banana Bread Recipe

Ingredients :

1/2 cup butter, softened
1 cup of sugar
2 large eggs
1 very ripe banana, mashed
1 cup crushed pineapple (do not drain)optional
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup shredded coconut

Instructions :
Preheat oven to 350 degrees.

In a large bowl, cream butter and sugar together with a mixer until light and fluffy.

Add eggs, one at a time and beat to incorporate.

Stir in mashed banana (ripe banana).

In a separate, medium sized bowl, sift together flour, baking powder, baking soda, and salt. Add to wet ingredients.

Stir in coconut flakes/shreds.
Pour mixture into a greased loaf pan (9×5). Bake for 60 minutes depending on the type of oven you are using
