**Ingredients:**
β€’ 1 lb beef sirloin tips, cut into 1-inch pieces
β€’ * 1 large onion, thinly sliced
β€’ * 2 tbsp olive oil
β€’ * 1 tbsp butter
β€’ * 1 tsp salt
β€’ * 1/2 tsp black pepper
β€’ * 1/2 tsp dried thyme



β€’ * 1 cup beef broth
β€’ * 2 lbs russet potatoes, peeled and quartered
β€’ * 1/2 cup milk (or cream for extra richness)
β€’ * 2 tbsp butter
β€’ * Salt and pepper to taste
**Instructions:**
1. **Caramelize the Onions:** Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply golden brown and caramelized (about 20-25 minutes). This is the key to amazing flavor! Set aside.



2. **Sear the Beef:** Season the beef tips generously with salt, pepper, and thyme. Heat the remaining 1 tbsp olive oil in the same skillet over medium-high heat. Sear the beef tips in batches until nicely browned on all sides. This helps lock in the juices.
3. **Simmer the Beef:** Return all the seared beef to the skillet. Add the caramelized onions and beef broth. Bring to a simmer, reduce heat to low, cover, and cook for 15-20 minutes, or until the beef is tender.
4. **Make the Mashed Potatoes:** While the beef simmers, boil the potatoes in salted water until tender (about 15-20 minutes). Drain well and return them to the pot. Mash with milk (or cream) and butter until smooth and creamy. Season with salt and pepper to taste.
5. **Serve:** Spoon the creamy mashed potatoes onto plates and top with the delicious seared beef tips and caramelized onions.
