Ingredients:

4 cups broccoli florets (fresh or frozen)

1 tbsp butter

1 small onion, chopped

2 cloves garlic, minced

2 cups chicken or vegetable broth

2 cups whole milk (or heavy cream for extra richness)

2 cups shredded sharp cheddar cheese

1 tsp Dijon mustard (optional)

Salt & pepper to taste

Instructions:

Cook the Broccoli: In a large pot, bring the broth to a simmer. Add the broccoli florets and cook for 8-10 minutes, or until tender.

Sauté Veggies: In another pot, melt the butter over medium heat. Add the onion and garlic, sautéing until soft (about 5 minutes).

Make the Soup Base: Pour in the milk and bring to a simmer. Add the cooked broccoli (and some of the broth if you like it smoother) and stir.

Add the Cheese: Gradually stir in the cheddar cheese until melted and smooth. Add a bit of Dijon mustard for a slight tang, then season with salt and pepper to taste.

Blend (Optional): For a creamier texture, use an immersion blender or regular blender to blend part or all of the soup.
