30-Minute Broccoli Cheddar Soup

Ingredients:
2 tbsp butter
1 onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
3 cups broccoli florets
1 cup milk
1 cup shredded cheddar cheese
1 tbsp flour
Salt and pepper to taste
Preparation:
In a large pot, melt butter over medium heat. Add onion and garlic, sautéing until softened, about 3-4 minutes.
Sprinkle in flour and stir for 1 minute to form a roux.
Slowly add vegetable broth, stirring constantly. Bring to a simmer and add broccoli florets. Cook for 10-12 minutes, until broccoli is tender.
Stir in milk and shredded cheddar cheese, and cook until cheese is melted and the soup is creamy.
Season with salt and pepper to taste, then serve hot. Enjoy!
