Cranberry Orange Chicken Meatballs .



Ingredients:
1 lb ground chicken
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/2 tsp salt
1/4 tsp black pepper



1 tbsp olive oil (for frying)
1 cup cranberry sauce (whole berry)
1/2 cup orange juice (freshly squeezed)
2 tbsp honey
1 tbsp soy sauce
1 tsp orange zest
Directions:
In a large mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, parsley, salt, and pepper. Mix until just combined.
Shape into small, bite-sized meatballs (about 1 inch in diameter).



Heat olive oil in a skillet over medium heat. Add meatballs in batches, cooking until browned on all sides, about 6–8 minutes. Remove and set aside.
In the same skillet, whisk together cranberry sauce, orange juice, honey, soy sauce, and orange zest. Bring to a simmer.
Add the meatballs back to the skillet, stirring gently to coat them in the glaze. Simmer for 5–7 minutes, or until meatballs are cooked through and sauce is slightly thickened.
Serve warm, garnished with extra parsley or orange zest if desired.
