Bacon-Wrapped Meatloaf

My entire family loved this so much. I’ll be making twice as much next time!

Bacon-wrapped meatloaf is a comforting classic that merges the hearty satisfaction of traditional meatloaf with the irresistible allure of crispy, savory bacon. This dish is perfect for those looking to bring a touch of indulgence to a weeknight dinner or impress guests with a homemade meal that looks as good as it tastes. Originating from the homes of industrious cooks who knew how to elevate simple ingredients, the bacon wrap not only adds flavor but also helps keep the meatloaf moist. The final glaze provides a sweet balance to the saltiness, creating a mouthwatering experience that’s hard to resist.

This bacon-wrapped meatloaf pairs beautifully with a creamy mashed potato, allowing the rich gravy to blend with the meat’s juices. A side of roasted green beans or a fresh, crunchy salad can add a refreshing contrast to the rich flavors of the meatloaf. For a complete meal, consider serving a warm, crusty bread to soak up any leftover glaze and juices.
Servings: 6-8 servings
Ingredients
1 1/2 pounds ground beef
1/2 pound ground pork
1 cup breadcrumbs
1/2 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 egg
1 tablespoon Worcestershire sauce
1 tablespoon ketchup
1 teaspoon salt
1/2 teaspoon black pepper
10-12 slices of bacon
1/4 cup brown sugar
1/4 cup ketchup (for glaze)
2 tablespoons apple cider vinegar
Directions
Preheat your oven to 350°F (175°C).

In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, onion, garlic, egg, Worcestershire sauce, ketchup, salt, and pepper. Mix until just combined.
Shape the mixture into a loaf form and place it on a foil-lined baking sheet.
Carefully wrap the loaf with bacon slices, tucking ends underneath.
In a small bowl, mix the brown sugar, ketchup, and apple cider vinegar. Brush this glaze over the bacon-wrapped loaf.
Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for at least 10 minutes before slicing and serving.
Variations & Tips

For a spicier kick, add 1 teaspoon of chili powder or a dash of cayenne pepper to the meat mixture. You can also try using turkey or chicken for a lighter version. For added depth of flavor, consider incorporating chopped mushrooms or bell peppers into the mix. If you’re looking for a different glaze, try substituting the ketchup with barbecue sauce or adding a tablespoon of mustard for tanginess. Finally, for a touch of sweetness, a thin layer of cranberry or apricot preserves under the bacon works wonders.
