This Italian BBQ Chicken Marinade is a delightful fusion of tangy barbecue flavors and classic Italian herbs, making it a hit at any family gathering or weekend cookout. Inspired by my travels in Italy and a love for American BBQ, this marinade brings together the best of both worlds and is sure to make your chicken the star of the show.
This Italian BBQ Chicken pairs beautifully with a simple side of roasted vegetables or a fresh garden salad. Adding a crusty loaf of garlic bread and perhaps some creamy mashed potatoes will turn this into a hearty, comforting meal. For a lighter option, serve it with a side of grilled zucchini or a refreshing cucumber and tomato salad.
Italian BBQ Chicken Marinade
Servings: 4-6 servings
Ingredients
1/4 cup olive oil
1/4 cup balsamic vinegar
1/4 cup tomato paste
2 tablespoons honey
1 tablespoon Dijon mustard
3 cloves garlic, minced
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
4-6 boneless, skinless chicken breasts
Directions
1. In a medium bowl, whisk together the olive oil, balsamic vinegar, tomato paste, honey, and Dijon mustard until well combined.
2. Stir in the minced garlic, dried oregano, dried basil, smoked paprika, salt, and black pepper.
3. Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated.
4. Seal the bag or cover the dish and refrigerate for at least 2 hours, or up to overnight for best results.
5. Preheat your grill to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off.
6. Grill the chicken for 6-7 minutes on each side, or until fully cooked and juices run clear. The internal temperature should reach 165°F (75°C).
7. Remove from the grill and let the chicken rest for a few minutes before serving.
Variations & Tips
For a little heat, add a teaspoon of red pepper flakes to the marinade. This recipe also works wonderfully with chicken thighs or drumsticks if you prefer darker meat. If you’re short on time, you can bake the marinated chicken in a 375°F (190°C) oven for 25-30 minutes. Don’t have a grill? A stovetop grill pan works just as well for that perfect char.
