1 lb ground beef
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 cup bell peppers (red, green, yellow), diced
1 can (14–15 oz) diced tomatoes
1 can (8 oz) tomato sauce
4 cups beef broth
1 cup cooked rice (or ½ cup uncooked added earlier)
1 tsp Italian seasoning
1 tsp paprika
Salt & black pepper to taste
Fresh parsley (optional)
Brown the beef
In a large pot, cook ground beef until browned. Drain excess fat.
Sauté veggies
Add olive oil, onion, and bell peppers. Cook 5–6 minutes until softened. Add garlic.
Build the soup
Stir in diced tomatoes, tomato sauce, and beef broth.
Season & simmer
Add Italian seasoning, paprika, salt, and pepper. Simmer 20–25 minutes.
Add rice
Stir in cooked rice (or add uncooked earlier and simmer longer).
Finish & serve
Taste and adjust seasoning. Garnish with parsley.
Top with shredded cheese (optional)
Serve with crusty bread
