Creamy Spiced Cheese Dip with Thick-Cut Fries

Ingredients

For the Thick-Cut Fries:

    • 3 large Russet potatoes, peeled and cut into thick sticks

    • 2 tablespoons olive oil (or vegetable oil for frying)



  • Sea salt, to taste

For the Creamy Spiced Dip:

  • 2 tablespoons unsalted butter

  • 2 tablespoons all-purpose flour

  • 1.5 cups whole milk (warmed slightly)

  • 1.5 cups sharp cheddar cheese, freshly grated

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon turmeric (for the vibrant golden color)

  • 1/4 teaspoon black pepper

  • Salt, to taste

For Garnish:

    • 1 tablespoon fresh parsley or cilantro, finely chopped



  • A pinch of smoked paprika or chili flakes

Instructions

1. Prepare the Fries:

  • To Bake: Preheat your oven to 200°C (400°F). Toss the potato sticks with olive oil and sea salt. Spread them evenly on a baking sheet lined with parchment paper. Bake for 25-30 minutes, turning halfway, until golden and crispy.

  • To Fry: Alternatively, deep fry the potato sticks in hot oil at 180°C (350°F) until golden brown. Drain on paper towels and season with salt immediately.

2. Make the Roux:

  • In a medium saucepan, melt the butter over medium heat.

  • Whisk in the flour and cook for 1-2 minutes, stirring constantly until the mixture turns a light blonde color and smells slightly nutty. Do not let it burn.

3. Build the Sauce:

  • Slowly pour in the warm milk, whisking continuously to prevent lumps from forming.

  • Continue to cook and whisk for about 3-5 minutes until the mixture thickens enough to coat the back of a spoon.

4. Add the Cheese and Spices:

    • Reduce the heat to low. Add the smoked paprika, garlic powder, turmeric, and black pepper.



  • Gradually add the grated sharp cheddar cheese, stirring gently until completely melted and the sauce is smooth and velvety. If the sauce is too thick, add a small splash of milk. Taste and adjust salt if necessary.

5. Serve:

  • Pour the warm, creamy dip into a rustic serving bowl (like the one in your photo).

  • Garnish the top with finely chopped fresh parsley and a light dusting of smoked paprika.

  • Dip the freshly made thick-cut fries directly into the center of the sauce and enjoy immediately!
