Ingredients
For the Thick-Cut Fries:

3 large Russet potatoes, peeled and cut into thick sticks

2 tablespoons olive oil (or vegetable oil for frying)

For the Creamy Spiced Dip:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1.5 cups whole milk (warmed slightly)

1.5 cups sharp cheddar cheese, freshly grated

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder
-
1/4 teaspoon turmeric (for the vibrant golden color)

1/4 teaspoon black pepper

Salt, to taste
For Garnish:

1 tablespoon fresh parsley or cilantro, finely chopped

A pinch of smoked paprika or chili flakes
Instructions
1. Prepare the Fries:

To Bake: Preheat your oven to 200°C (400°F). Toss the potato sticks with olive oil and sea salt. Spread them evenly on a baking sheet lined with parchment paper. Bake for 25-30 minutes, turning halfway, until golden and crispy.

To Fry: Alternatively, deep fry the potato sticks in hot oil at 180°C (350°F) until golden brown. Drain on paper towels and season with salt immediately.
2. Make the Roux:

In a medium saucepan, melt the butter over medium heat.

Whisk in the flour and cook for 1-2 minutes, stirring constantly until the mixture turns a light blonde color and smells slightly nutty. Do not let it burn.
3. Build the Sauce:

Slowly pour in the warm milk, whisking continuously to prevent lumps from forming.

Continue to cook and whisk for about 3-5 minutes until the mixture thickens enough to coat the back of a spoon.
4. Add the Cheese and Spices:

Reduce the heat to low. Add the smoked paprika, garlic powder, turmeric, and black pepper.

Gradually add the grated sharp cheddar cheese, stirring gently until completely melted and the sauce is smooth and velvety. If the sauce is too thick, add a small splash of milk. Taste and adjust salt if necessary.
5. Serve:

Pour the warm, creamy dip into a rustic serving bowl (like the one in your photo).

Garnish the top with finely chopped fresh parsley and a light dusting of smoked paprika.

Dip the freshly made thick-cut fries directly into the center of the sauce and enjoy immediately!
