A smooth, mildly spiced British-style curry sauce that’s perfect for fries, fish, chicken, or sausages.
Ingredients
- 2 tbsp butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 tbsp mild curry powder
- 1 tsp turmeric
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tbsp tomato paste
- 2 cups (500 ml) chicken or vegetable stock
- 1 tsp Worcestershire sauce
- 1 tsp sugar
- Salt and black pepper, to taste
- ¼ cup heavy cream (optional, for a richer sauce)
Instructions
- Melt the butter in a saucepan over medium heat.
- Add the onion and cook for 5–7 minutes until soft.
- Stir in the garlic and cook for 30 seconds.
- Add the flour, curry powder, turmeric, garlic powder, and onion powder. Cook for 1 minute while stirring.
- Whisk in the stock gradually until smooth.
- Stir in the tomato paste, Worcestershire sauce, and sugar.
- Simmer for 10–15 minutes, stirring occasionally, until thickened.
- Blend the sauce with an immersion blender (or regular blender) until smooth, if desired.
- Stir in the cream (optional), season with salt and pepper, and serve hot.
