Classic Chip Shop Curry Sauce

A smooth, mildly spiced British-style curry sauce that’s perfect for fries, fish, chicken, or sausages.

Ingredients



  • 2 tbsp butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 tbsp mild curry powder
  • 1 tsp turmeric
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp tomato paste
  • 2 cups (500 ml) chicken or vegetable stock
  • 1 tsp Worcestershire sauce
  • 1 tsp sugar
  • Salt and black pepper, to taste
  • ¼ cup heavy cream (optional, for a richer sauce)



Instructions

  1. Melt the butter in a saucepan over medium heat.
  2. Add the onion and cook for 5–7 minutes until soft.
  3. Stir in the garlic and cook for 30 seconds.
  4. Add the flour, curry powder, turmeric, garlic powder, and onion powder. Cook for 1 minute while stirring.
  5. Whisk in the stock gradually until smooth.
  6. Stir in the tomato paste, Worcestershire sauce, and sugar.
  7. Simmer for 10–15 minutes, stirring occasionally, until thickened.
  8. Blend the sauce with an immersion blender (or regular blender) until smooth, if desired.
  9. Stir in the cream (optional), season with salt and pepper, and serve hot.
