Slow Cooker Smothered Pork Chops

🥩 Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 3 cloves garlic, minced
- 1 small onion, finely diced
- 1 cup chicken broth
- ½ cup barbecue sauce
- ¼ cup brown sugar
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp dried thyme
- 1 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)

- Season the Pork Chops
- Pat the pork chops dry.
- Season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Sear the Meat
- Heat olive oil in a skillet over medium-high heat.
- Sear the pork chops for 2–3 minutes per side until golden brown.
- Transfer them to the slow cooker.
- Prepare the Sauce
- In the same skillet, sauté the onion for 3–4 minutes.
- Add the minced garlic and cook for 30 seconds.
- Stir in the chicken broth, barbecue sauce, brown sugar, Worcestershire sauce, Dijon mustard, and thyme.
- Simmer for 2 minutes.
- Slow Cook
- Pour the sauce over the pork chops.
- Cover and cook:
- LOW: 6–7 hours
- HIGH: 3–4 hours
- The pork should be fork-tender.
- Optional Thickening
- Mix cornstarch with cold water.
- Stir into the sauce during the last 15 minutes of cooking until thickened.
