Slow Cooker Smothered Pork Chops

These tender, juicy pork chops are slow-cooked in a rich, sweet, and savory sauce until they practically melt in your mouth. Perfect served with mashed potatoes, rice, or roasted vegetables.

🥩 Ingredients



  • 4 bone-in pork chops (about 1 inch thick)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 cup chicken broth
  • ½ cup barbecue sauce
  • ¼ cup brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)

  1. Season the Pork Chops
    • Pat the pork chops dry.
    • Season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Sear the Meat
    • Heat olive oil in a skillet over medium-high heat.
    • Sear the pork chops for 2–3 minutes per side until golden brown.
    • Transfer them to the slow cooker.
  3. Prepare the Sauce
    • In the same skillet, sauté the onion for 3–4 minutes.
    • Add the minced garlic and cook for 30 seconds.
    • Stir in the chicken broth, barbecue sauce, brown sugar, Worcestershire sauce, Dijon mustard, and thyme.
    • Simmer for 2 minutes.
  4. Slow Cook
    • Pour the sauce over the pork chops.
    • Cover and cook:
      • LOW: 6–7 hours
      • HIGH: 3–4 hours



    • The pork should be fork-tender.
  5. Optional Thickening
    • Mix cornstarch with cold water.
    • Stir into the sauce during the last 15 minutes of cooking until thickened.
