Greek Feta & Cucumber Bite Skewers

Ingredients (Makes 24 bite-sized skewers)



  • 1 large English cucumber (about 300 g), cut into 24 thick slices (about 1.5 cm / ½ inch each)
  • 200 g (7 oz) Greek feta cheese, cut into 24 cubes (about 2 cm / ¾ inch)
  • 24 cherry tomatoes
  • 24 pitted Kalamata olives
  • 24 fresh mint or basil leaves (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • ¼ teaspoon freshly ground black pepper
  • Pinch of sea salt (optional, as feta is naturally salty)
  • Wooden cocktail skewers or appetizer picks

Instructions

Step 1: Prepare the Ingredients

  1. Wash the cucumber and cherry tomatoes thoroughly.
  2. Slice the cucumber into thick, even rounds (about 1.5 cm thick).
  3. Cut the feta cheese into 24 equal-sized cubes.
  4. Drain the Kalamata olives and pat them dry.



Step 2: Make the Dressing

In a small bowl, whisk together:

  • Extra virgin olive oil
  • Lemon juice
  • Dried oregano
  • Black pepper

Mix until well combined.

Step 3: Assemble the Skewers

On each cocktail skewer, thread in this order:

  1. Cherry tomato
  2. Fresh mint or basil leaf (optional)
  3. Cube of feta cheese
  4. Kalamata olive
  5. Cucumber slice (as the base)

Repeat until all 24 skewers are assembled.

Step 4: Season

Arrange the skewers on a serving platter.

Lightly drizzle the oregano-lemon dressing over the skewers.

If desired, sprinkle with a little extra oregano and freshly cracked black pepper.

Step 5: Chill

Refrigerate for 15–20 minutes before serving to allow the flavors to meld.
