Cajun Steak with Creamed Spinach and Roasted Radishes 🥗✨

Give your dinner a special touch with this Cajun-inspired steak! Juicy steak with a bold kick, served with creamy keto-friendly spinach, tender roasted radishes, and a spicy aioli sauce. Topped with vibrant microgreens and pickled red onions, it’s an explosion of flavors you’ll love! Here’s how to prepare it:
Ingredients (for 2 servings):
For the steak:
1 lb flank steak



1 tbsp Cajun seasoning (store-bought or homemade: 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne pepper, 1/4 tsp thyme, salt, and pepper)
1 tbsp olive oil
Salt to taste
For the roasted radishes:
1 bunch of radishes (about 10-12), halved
2 tbsp olive oil
1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
Salt and pepper to taste
For the keto creamed spinach:
8 oz fresh spinach (or 10 oz frozen, thawed, and drained)
1/2 cup heavy cream
1 garlic clove, minced
1/4 tsp nutmeg
1/4 cup grated Parmesan cheese
Salt and pepper to taste
For the spicy aioli:
1/4 cup mayonnaise
1 tsp hot sauce (such as Sriracha or your preferred choice)
1/2 tsp Cajun seasoning
1 tsp lemon juice
Salt to taste
For garnish:
1/4 cup microgreens
2 tbsp pickled red onions (store-bought or quick-pickled: soak thin red onion slices in 1/4 cup vinegar, 1 tsp salt, and 1 tsp sugar for 30 minutes)
Instructions:



1. Season the steak: Rub the flank steak with Cajun seasoning and a pinch of salt on both sides. Let it rest for 15-20 minutes to absorb the flavors.
2. Roast the radishes: Preheat the oven to 400°F (200°C). Toss the halved radishes with olive oil, thyme, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
3. Prepare the creamed spinach: In a pan over medium heat, sauté the garlic in a splash of olive oil for 30 seconds. Add the spinach and cook until wilted (or fully heated if using frozen spinach), about 2-3 minutes. Stir in the heavy cream, nutmeg, and Parmesan, cooking for another 2-3 minutes until thickened. Season with salt and pepper. Set aside.
4. Sear the steak: Heat a skillet or grill over medium-high heat with 1 tbsp olive oil. Sear the steak for 4-5 minutes per side for medium-rare, or cook to your preferred doneness. Let it rest for 5 minutes before slicing or serving whole.
5. Make the spicy aioli: In a small bowl, mix the mayonnaise, hot sauce, Cajun seasoning, lemon juice, and a pinch of salt until smooth.
6. Assemble the dish: On a wooden board or plate, place the Cajun steak alongside a serving of creamed spinach, topped with microgreens and pickled red onions. Arrange the roasted radishes on the side and finish with spoonfuls of spicy aioli for dipping.
