2 salmon fillets
2 sweet potatoes, peeled and sliced
2 cups fresh spinach

Light mustard glaze (mix 2 tablespoons Dijon mustard, 1 tablespoon honey, 1 tablespoon olive oil, salt, and pepper)
Instructions:
1. Preheat the oven: Preheat your oven to 200°C (400°F).
2. Prepare the sweet potatoes: Toss the sweet potato slices with a little olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes or until tender and slightly caramelized.
