Creamy Carrot Pineapple Walnut Salad – A Sweet & Crunchy Delight!

This vibrant Carrot Salad with Pineapple & Walnuts is the perfect fusion of freshness, sweetness, and crunch. Served chilled, it’s ideal as a refreshing side dish or a light dessert for spring and summer gatherings.
Ingredients:
4 carrots, peeled and grated
300 g canned pineapple in syrup, diced
½ cup (120 ml) pineapple syrup (from the can)
100 g walnuts, finely chopped
Optional: 2–3 tbsp mayonnaise or Greek yogurt for creaminess
Optional garnish: mint leaves or a few whole walnuts
Method:



1. Prep Ingredients: Grate the carrots and drain the pineapple, reserving ½ cup of syrup.
2. Mix Base: In a large bowl, combine grated carrots, diced pineapple, and chopped walnuts.
3. Add Creaminess: For a creamy version, stir in mayonnaise or yogurt to your taste.
4. Moisten & Chill: Pour in the pineapple syrup to lightly moisten the salad and enhance flavor. Mix well.
5. Chill & Serve: Refrigerate for at least 30 minutes before serving. Garnish if desired.
