Crispy Dill Potato Fritters

I served these at a gathering and they were gone in no time! Everyone wanted to know my secret!

In the heart of the Midwest, where the fields stretch as far as the eye can see, potatoes have always been a staple in our kitchens. This recipe for crispy dill potato fritters brings together the humble potato and the aromatic dill, a herb that often graces our gardens. These fritters are a nod to simpler times, when meals were crafted from what was readily available, yet they remain timeless in their appeal. Perfect for a family gathering or a quiet evening at home, these fritters are a comforting reminder of the past and a delicious treat for the present.
These crispy dill potato fritters pair beautifully with a dollop of sour cream or a tangy yogurt dip. For a complete meal, serve them alongside a fresh garden salad or some roasted vegetables. If you’re feeling indulgent, they also make a delightful accompaniment to a hearty stew or a bowl of creamy tomato soup. The fritters’ crispy texture and the fresh burst of dill make them a versatile side dish that complements a variety of flavors.

Ingredients
4 medium potatoes, peeled and grated
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh dill, chopped
2 large eggs
1/4 cup all-purpose flour
Salt and pepper to taste
Vegetable oil for frying
Directions
1. Begin by grating the potatoes and then place them in a clean kitchen towel. Squeeze out as much moisture as possible.
2. In a large bowl, combine the grated potatoes, chopped onion, minced garlic, and fresh dill.
3. Add the eggs and flour to the potato mixture, and season with salt and pepper. Mix until well combined.
4. Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
5. Once the oil is hot, drop spoonfuls of the potato mixture into the skillet, flattening them slightly with the back of a spoon.
6. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
7. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
8. Serve the fritters warm, garnished with additional fresh dill if desired.
Variations & Tips
For a cheesy twist, add 1/2 cup of shredded cheddar cheese to the potato mixture. If you prefer a bit of heat, a pinch of red pepper flakes can be added for a spicy kick. For a gluten-free version, substitute the all-purpose flour with chickpea flour or rice flour. These fritters can also be baked in the oven at 400°F (200°C) for about 20 minutes, flipping halfway through, for a healthier alternative.
