Ingredients:
For the Beef Satay:
– 500g (1 lb) beef sirloin or flank steak, thinly sliced into strips
– 2 tbsp soy sauce
– 1 tbsp fish sauce
– 1 tbsp brown sugar
– 1 tbsp lime juice
– 2 cloves garlic, minced
– 1 tsp ground coriander
– 1 tsp turmeric
– 1/2 tsp cumin
– 1/4 tsp black pepper
– 2 tbsp coconut milk (or oil)
– Bamboo skewers (soaked in water for 30 mins)
For the Spicy Peanut Sauce:
– 1/2 cup smooth peanut butter
– 1/4 cup coconut milk
– 2 tbsp soy sauce
– 1 tbsp lime juice
– 1 tbsp honey or brown sugar
– 1 tsp sriracha or chili paste (adjust to taste)
– 1 small garlic clove, minced
– 1 tsp grated ginger
– 1-2 tbsp water (to thin if needed)
For Garnish & Serving:
– 1 ripe mango, finely diced
– 2 tbsp roasted peanuts, roughly chopped
– Fresh microgreens or cilantro
Instructions:l
1. Marinate the Beef:
– In a bowl, mix soy sauce, fish sauce, brown sugar, lime juice, garlic, coriander, turmeric, cumin, black pepper, and coconut milk.
– Add beef strips, ensuring they’re well coated. Marinate for at least 1 hour (or overnight for deeper flavor).
2. Make the Peanut Sauce:
– Whisk all sauce ingredients in a small saucepan over low heat until smooth. Add water as needed for a drizzle-able consistency. Set aside.
3. Skewer & Grill the Beef:
– Thread beef strips onto soaked skewers.
– Grill (or pan-sear) over medium-high heat for 2-3 mins per side until slightly charred but juicy.
4. Plate & Garnish:
– Drizzle peanut sauce generously over the skewers.
– Scatter diced mango, chopped peanuts, and microgreens around.
