**For the Crust:**

– **24 oz (3 blocks)** cream cheese, softened
– **1 cup** granulated sugar
– **3 large eggs**
– **1 cup** sour cream
– **1 tsp** pure vanilla extract
– **¼ cup** all-purpose flour
– **Caramelized bananas** (from above), mashed
**For the Rum Glaze:**
– **½ cup** dark brown sugar
– **2 tbsp** unsalted butter
– **¼ cup** heavy cream
– **2 tbsp** dark rum
– **Pinch of sea salt**

1️⃣ **Prepare the Crust:**
– Preheat the oven to **325°F (163°C)**.
– In a bowl, mix the **graham cracker crumbs**, **sugar**, and **melted butter** until combined.
– Press the mixture firmly into the bottom of a **9-inch springform pan**.
– Bake for **10 minutes**, then set aside to cool.
2️⃣ **Caramelize the Bananas:**
– In a skillet, melt **butter** over medium heat.
– Add **brown sugar** and stir until it starts to bubble.
– Add the **banana slices** and **cinnamon**, cooking until golden and caramelized (about **3–4 minutes**).
– Stir in **rum** (if using) and cook for an additional **1 minute**.
– Remove from heat, mash slightly, and let cool.
3️⃣ **Make the Cheesecake Filling:**
– In a large bowl, beat the **cream cheese** and **sugar** until smooth and creamy.
– Add the **eggs** one at a time, mixing well after each addition.
– Mix in the **sour cream**, **vanilla extract**, and **flour** until fully combined.
– Fold in the **mashed caramelized bananas**.
