Ingrédients
1 tablespoon olive oil
1 pound ground lamb or beef
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 tablespoon tomato paste
4 cups beef broth
1 cup frozen peas
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
2 cups mashed potatoes (leftover or freshly made)
Chopped fresh parsley for garnish
Directions
In a large pot, heat the olive oil over medium heat. Add the ground lamb or beef and cook until browned, breaking it up with a spoon as it cooks.
Add the onion, garlic, carrots, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
Stir in the tomato paste and cook for another minute.
Pour in the beef broth and bring the mixture to a simmer.



Add the frozen peas, Worcestershire sauce, thyme, salt, and pepper. Simmer for 10-15 minutes, allowing the flavors to meld.
Stir in the mashed potatoes until well incorporated, creating a creamy texture.
Serve hot, garnished with chopped fresh parsley.
Variations & Tips
For a vegetarian version, substitute the meat with lentils or a plant-based ground meat alternative and use vegetable broth instead of beef broth. You can also add other vegetables like corn or green beans for additional flavor and texture. If you prefer a thicker soup, reduce the broth by half a cup or add more mashed potatoes. For a dairy-free option, ensure the mashed potatoes are made without butter or milk, using olive oil or a dairy-free alternative instead.
