Ingredients:
– 1 1/2 lbs beef tenderloin, cut into medallions
– Salt and black pepper to taste
– 2 tbsp olive oil
– 4 tbsp unsalted butter, divided
– 4 cloves garlic, minced
– 1/4 cup beef broth
– 1 tbsp fresh lemon juice
– 1 tsp fresh thyme leaves
– 1 tsp fresh rosemary, chopped
– Fresh parsley, chopped for garnish
Instructions:
1. Prepare the Beef Medallions:
Season the beef medallions generously with salt and black pepper.
2. Cook the Beef Medallions:
In a large skillet, heat the olive oil over medium-high heat.
Add the beef medallions and cook for 3-4 minutes on each side, or until they reach your desired level of doneness. Remove the beef medallions from the skillet and set aside.
3. Make the Garlic Butter Sauce:
In the same skillet, melt 2 tablespoons of unsalted butter over medium heat.
Add the minced garlic and cook for about 1 minute until fragrant.
Pour in the beef broth and fresh lemon juice, stirring to deglaze the skillet and scrape up any browned bits from the bottom.
Stir in the fresh thyme leaves and chopped rosemary.
Add the remaining 2 tablespoons of unsalted butter and stir until melted and well combined. Season with salt and black pepper to taste.
4. Combine and Serve:
Return the cooked beef medallions to the skillet and spoon the garlic butter sauce over them.
Cook for an additional 1-2 minutes until the beef medallions are heated through and well coated with the sauce.
5. Garnish:
Transfer the beef medallions to a serving platter.
Garnish with chopped fresh parsley.
