Southern Style Brown Sugar Pork Chops

I made this dish for a gathering, and people couldn’t stop chatting about it.

Ingredients
4 bone-in pork chops, about 1 inch thick
1/2 cup brown sugar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional, for a bit of heat)
2 tablespoons olive oil
2 cloves garlic, minced
1/4 cup apple cider vinegar
1/4 cup chicken broth
Directions
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix together the brown sugar, salt, black pepper, paprika, and cayenne pepper.
3. Rub the spice mixture evenly over both sides of the pork chops.
4. In a large oven-safe skillet, heat the olive oil over medium-high heat.
5. Add the pork chops to the skillet and sear for about 3 minutes on each side, until they are nicely browned.
6. Remove the pork chops from the skillet and set them aside.
7. Reduce the heat to medium and add the minced garlic to the skillet. Sauté for about 1 minute until fragrant.
8. Pour in the apple cider vinegar and chicken broth, stirring to deglaze the pan and scrape up any browned bits.
9. Return the pork chops to the skillet, spooning some of the sauce over them.
10. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C).
11. Remove the skillet from the oven and let the pork chops rest for a few minutes before serving.



Variations & Tips

 

For a different flavor profile, you can substitute the apple cider vinegar with balsamic vinegar for a richer taste. If you prefer a smokier flavor, try adding a teaspoon of smoked paprika to the spice rub. For a touch of sweetness, you can also add a tablespoon of honey to the sauce. If you’re cooking for a crowd, this recipe can easily be doubled, just make sure to use a larger skillet or work in batches.
