Ingredients
12 oz smoked sausage (Andouille or kielbasa), sliced
1 lb shrimp, peeled & deveined
1 tbsp olive oil
1 small onion, diced
1 green bell pepper, diced
2 celery stalks, chopped
3 cloves garlic, minced
1 can (14–15 oz) diced tomatoes
6 cups chicken broth
1 cup uncooked white rice
1 tsp Cajun seasoning
½ tsp paprika
½ tsp dried thyme
Salt & black pepper to taste
Fresh parsley for garnish
Optional:
Dash hot sauce
½ tsp red pepper flakes
½ cup crab meat
Instructions
1️⃣ Brown sausage
Heat oil in a large pot.
Add sausage and cook until lightly browned. Remove and set aside.
2️⃣ Sauté veggies
In same pot, add onion, bell pepper, and celery.
Cook 4–5 minutes.
Add garlic and cook 30 seconds.
3️⃣ Build the soup
Add diced tomatoes, broth, seasonings, and rice.
Return sausage to pot.
Bring to a simmer and cook 15–18 minutes until rice is tender.
4️⃣ Add shrimp
Stir in shrimp and cook 3–5 minutes until pink and cooked through.
5️⃣ Finish
Taste and adjust seasoning.
Sprinkle with fresh parsley.
💡 Tips
If making ahead, cook rice separately so it doesn’t absorb all the broth.
For thicker stew-style texture, let it simmer uncovered a few extra minutes.
