This homemade enchirito is next-level delicious—soft tortillas stuffed with seasoned beef and beans, smothered in rich red sauce, and topped with melty cheese for that ultimate comfort bite.

Yield: 5 servings

 

Ingredients:

 

* 1 lb ground beef

* 1 packet taco seasoning

* 1/4 cup water

* 1 can (16 oz) refried beans

* 1 can (10 oz) red enchilada sauce

* 5 large flour tortillas

* 1 1/2 cups shredded cheddar cheese

* 1/2 cup diced white onion

* 1/4 cup sliced black olives (optional)

* 1/2 teaspoon garlic powder

* 1/2 teaspoon cumin

 

Instructions:

 

1. Preheat oven to 375°F and lightly grease a baking dish.

2. In a skillet over medium heat, cook ground beef until browned; drain excess fat.

3. Add taco seasoning, garlic powder, cumin, and water; simmer until thickened.

4. Warm refried beans until smooth and spreadable.

5. Lay out tortillas and spread a layer of refried beans down the center of each.

6. Add seasoned beef on top of the beans.

7. Roll tortillas burrito-style and place seam-side down in the baking dish.

8. Pour enchilada sauce generously over the top.

9. Sprinkle shredded cheese, diced onions, and black olives if using.

10. Bake uncovered for 20–25 minutes until hot and bubbly.

11. Let cool slightly before serving.

 

Pro Tip:

For that “better than fast food” finish, drizzle a little extra sauce and a spoon of sour cream on top right before serving—it makes every bite extra rich and satisfying!
